Ingredients:
1 Medium Butternut Squash
2 tbsp Olive Oil
2 Potatoes
1 Onion
2 Cloves Garlic
15g Thyme
1 pint Vegetable Stock
Seasoning
Method:
1. Chop Butternut Squash, onion, potatoes into cubes
2. Warm a large pot and add in olive oil. Next add in onions and cook until soft
3. Add in potatoes and squash, garlic and thyme. Cook for 3 minutes or so
4. Add in vegetable stock and allow to simmer for about 30 minutes or until potatoes and squash are soft
5. Using a blender or food processor, blend the soup until smooth. If too think, add a bit of water
6. Season and enjoy!
